Fast & Easy Baked Zucchini

Why We Love It

Super fast prep gets this dish ready to bake in a flash. Plus one pan makes clean up a breeze. Prep takes less than 5 minutes and cook time is 10 to 12 minutes.

Zucchini or Other Summer Squash

Around 1 Pound - 3 to 4 Medium Size

Panko Breadcrumbs

2 Tablespoons

Parmesan Cheese - Grated or Finely Shredded

2 Tablespoons

Oil - Extra Virgin Olive or Avocado Recommended

2 Tablespoons

Salt and Pepper


Prep and Cook

Grab a cutting board, sheet pan or shallow baking dish, and knife. Preheat oven to 450 degrees F.

Wash then cut your zucchini into 6 to 8 spears. Cut of the stem and end. St

How many spears you cut will depend on the size of your zucchini and personal preference.

Toss spears with oil on the sheet pan or baking dish

You can use any oil you have on hand, but keep in mind you will be baking at a high temperature so olive oil or avocado oil is best and adds some flavor. Canola or vegetable oil are okay too but do not add much flavor or health benefits.

Line up the spears on a lightly greased baking sheet or shallow baking dish

Place so that the spears are touching in one or two rows.

Add cheese, breadcrumbs, and season with salt & pepper

Since the spears are all touching you can lightly sprinkle on the cheese and breadcrumbs allowing the spears to catch and hold all the goodness. Season to taste with salt and pepper. Additional flavors to consider adding are onion or garlic powder, paprika, or other herbs.

Time to Bake

Place the baking sheet or dish into the hot oven on the middle rack. Cook uncovered for 10 to 12 minutes. You are looking the cheese to start turning golden brown and the spears to soften, but not mushy. 

Remove from oven and serve!
